Introduction:
Chlorogenic acid is condensed from the carboxyl group of caffeic acid and the hydroxyl group of quinic acid into phenolic acid, which is a phenylpropanoid substance synthesized by plant cells through the shikimic acid pathway. Chlorogenic acid and other polyphenols are known as “the seventh class of nutrients”. Chlorogenic acid is mainly found in Lonicera and Corresia of the family Honeysuckle and has a high content in Eucommia ulmoides leaves, honeysuckle, sunflower seeds, and coffee beans.
